#CovEAT – Strawberry (Vegetable) Smoothie Bowl

Smoothies are the quickest way to instantly get goodness into your diet and in the most fun way! A smoothie can be your five-a-day in one and, I mean – How else are you going to get your daily dose of maca, matcha and chia seeds?

Although, many people associate smoothies with only fruit, vegetables are an essential part to any nutritious smoothie! I like to stick to 1 serving of fruit to every 2/3 servings of vegetables to maximise the health benefits. This smoothie was no exception. Using minimal liquids will also give it this bowl/puree effect – which I find more satisfying for a meal. But, you can add more fluid to make it a more conventional smoothie.

Ingredients – I know, it sounds strange to put courgette or cauliflower in a smoothie.. BUT, they really thickness without altering the taste!

Smoothie (serves 1 very hungry person!)

1/4 Cauliflower (frozen)

1 1/2 Peeled Courgette (peeled to stop it going green!)

1/4 Avocado

5 Strawberries

1/3 cup of Almond Milk

1 teaspoon Matcha

1 teaspoon Cinnamon

1 teaspoon Maca powder

Toppings

1 tablespoon desiccated Coconut

1 teaspoon Chia seeds

1 Strawberry  (chopped into cubes)
